
I got the idea for this salad from the cafeteria of my work place which is normally not very tasteful. But this time it made me think of a pratic dish that is very easy. However, preperation must be made one day in advance, so planning is required for this one. Upon some research I added the ground wallnuts to the original receipe and it turned out delicious.
250 gr dry black eyed peas
1 bunch parsley and dill (or other herbs mint could be great)
2 middle size tomatoes
1 spring onion (optional)
1 cup ground wallnuts
1 lemon juice
3 tablespoons olive oil
Salt & Pepper
Put the peas into a large bowl and pour in some water until water is about two fingers above the peas. Let it rest for one night; the peas will soak in most of the water. Strain the peas and put them in a pot with water, bring them to a boil, cook for around 15 minutes and strain again. Put up some fresh water and boil the peas again until cooked. Add some salt while cooking amd let them rest after theiy are done.
Chop the herbs, tomatoes and spring onion. Add them to the beans. Mix the lemon juice, olive oil, wallnuts, salt and pepper to a vinnegrette and pour over the beans. Mix up the salad and serve as a single dish or with any kind of grilled meat/chicken or with a crunchy green salad.
